YUM...Apple Dumplings...a Fall Favorite!

Hi Ya’ll...
It’s fall! I guess you already knew that…today, here in Indiana, it is at least 80 degree’s…sunny…and absolutely beautiful!
I love fall! It is my favorite time of year! I love the cooler temps…I love the colors…I love pumpkins, mums, and cornstalks…but I Love, Love, Love…Apple Dumplings.

This has been sitting on my counter now for about a month….

A friend and I went to Mackinac Island…which by the way I love Mackinac Island…anyway…as we headed home through Michigan…we stopped at a cider mill and I bought a giant bag of Honey crisp apples. We ate a few here and there…

But today the sugar addiction got the best of me…and I decided it was time to make some apple dumplings. I thought I would share the recipe.

Ingredients:

2 cups water
1 ½ cups sugar
¼ tsp ground cinnamon
¼ tsp ground nutmeg (personally I don’t care for nutmeg, so I don’t add this)
8 drops of red food coloring
¼ cup butter or margarine
2 cups sifted all-purpose flour
2 tsp baking powder
1 tsp salt
¾ cup shortening
½ cup milk
6 small, whole apples

For the syrup, mix first 5 ingredients; cook 5 minutes…

While that’s cooking…I get my apples peeled and cored…and NOT perfectly I might  add…

Remove sauce from heat; add butter…

Maybe I shouldn’t have showed you this picture…it sort of looks like toxic waste…but it smells wonderful!!

Sift together dry ingredients; cut in shortening until mixture resembles coarse crumbs. Add milk all at once and stir just until the flour is moistened

Now the directions say to roll it out to 18” x 12” rectangle…but Better Crocker I am not, I simply take my dough…

Cut it in half…then divide each half into 3rds, praying that they come out somewhat the same size…

Then I roll out into whatever shape it happens to roll into…usually somewhat of a circle…and place the apple in the center…

Then I pretty much fill the hole with sugar…

I generally use white sugar…but you can use brown sugar too, or a combination of the two…

Sprinkle on some cinnamon…

Then put a big dollop of butter or margarine on top. I usually use butter in the sauce and margarine at this point, just because it is soft, and I can push it somewhat down into the core of the apple…

Then fold up the edges…and pinch to cover the apple…

Place all 6 apples in a 13 x 9 baking dish…pour sauce over the top of the apples…

Place into a 375 degree oven and bake for about 35 minutes…until  golden brown, bubbly and your house is smelling delightful!

Top with another of my favorites…vanilla ice cream…grab a cup of coffee…and enjoy!!

Sill counting Blessings
